Delphine’s contemporary dining experience moves easily between land and sea using locally sourced ingredients from Prince Edward County’sleading farms and producers, complemented by a vibrant raw program and composed dishes that reflect Chef Tse’s precise, ingredient-led approach to flavour, balance, and texture. Though contemporary in execution, the menu carries a strongsense of familiarity. Inspired by the sizzling platters and wok cooking that defined three generations of his family’s restaurants, Chef Tse cooks from farm to fire bringing depth of flavour, allowing the ingredients to speak confidently.

Justin Daniel Tse

For Justin Daniel Tse, the kitchen has always been a place of legacy. A third-generation chef raised in Kington, Ontario, Justin's culinary journey began not in culinary school but at his father's side - honing his fundamentals by peeling vegetables and folding won-tons. This early immersion in hospitality sparked a lifelong obsession with the craft that has since taken him from the Arctic Circle to the world's most elite Michelin-starred kitchens.

Justin joins Delphine at Claramount Club following a transformative tenure as Executive Chef and F&B Director at Wander the Resort. His resume reads like a global culinary map, featuring stings at Atelier in Ottawa and Oliver and Bonacini, as well as international stages at two Michelin-starred Restaurant Sat Bains (UK), and Chicago's acclaimed Moto and Esme.

A celebrated innovator, Justin was named one of Canada's Top 30 Under 30 in Restaurants & Hospitality and stood as a finalist for the prestigious S. Pellegrino Young Chef Academy. Whether hosting sold-out pop up series or helming luxury lodge kitchens 800 km north of the Arctic Circle, Justin's cooking is defined by a rigorous work ethic and a creative vision that honours tradition while relentlessly pushing boundaries. At Delphine, he brings this global perspective home to Prince Edward County.
